Maccheroncini with peppers


Ingredienti per 4 persons
240 g ridged maccheroncini
300 g sweet peppers (yellow and red)
4 tablespoons grated Parmesan cheese
8 tablespoons oil
salt and black pepper

Preparazione
1. Scald the whole peppers over a flame.
2. Peel them carefully, if necessary immersing them in lukewarm water to make the skin come off easily.
3. Cut the peppers in half, remove the seeds and cut them in strips 7 mm wide.
4. Pour 4 tablespoons oil into a large saucepan, add the peppers, salt and cook for about 8 minutes over a medium heat till the peppers are cooked but firm.
5. Cook the pasta in boiling salted water and drain when "al dente" (tender but firm to the bite).
6. Pour the drained pasta into the saucepan, add the grated parmesan, the pepper, the rest of the oil and mix well for 1 minute to blend the ingredients, then serve.
