Maccheroni country style


Ingredienti per 4 persons
240 g ridged maccheroni
3 artichokes
1 lemon
120 g fresh sausage
2 tablespoons chopped onion
½ hot chili pepper
4 tablespoons oil
4 tablespoons white wine
2 tablespoons grated Parmesan cheese
salt and black pepper

Preparazione
1. Clean the artichokes, remove the hard outer leaves and cut off the tops.
2. Cut the artichokes in half, eliminate the chokes (the hairy centres), slice them lengthwise into thin strips and soak in water with lemon juice.
3. Put the oil and the chopped onion in a saucepan; after 2 minutes add the dried artichokes; salt and cook for 5 minutes.
4. Peel and crumble the sausage, add to the artichokes with the finely chopped chili pepper.
5. Sprinkle with white wine, cook for 5 more minutes stirring, then add a few tablespoons of boiling water and mix well.
6. Cook the maccheroni in abundant boiling salted water and drain when "al dente" (tender but firm to the bite).
7. Pour the pasta into the saucepan, sprinkle with the Parmesan cheese, pepper, mix well over a high heat for a minute and serve on hot plates.
