Ingredienti per 4 persons 280 g spaghetti
40 g butter
½ teaspoon saffron pistils
1 tablespoon meat extract
6 tablespoons cream
40 g grated Parmesan cheese
salt and pepper
Preparazione 1. Break the spaghetti into pieces 5 cm long.
2. In a saucepan put the spaghetti, half the butter, 2 ladles of boiling water, a little salt and cook over a low heat, stirring from time to time.
3. Check cooking of the pasta, stir again and add boiling water a little at a time.
4. Dilute the saffron pistils in lukewarm water and add them to the past when it is half cooked.
5. When the pasta is nearly cooked, add the cream, the rest of the butter, the meat extract and, shortly afterwards, the Parmesan cheese.
6. Mix vigorously to blend, add pepper and serve on hot plates.
