Tagliolini with peas and ham


Ingredienti per 4 persons
280 g dry tagliolini
600 g unshelled peas
100 g cooked ham cut in thick slices
3 mint leaves
3 basil leaves
a sprig of parsley
50 g butter
1 tablespoon grated Parmesan cheese
salt and pepper

Preparazione
1. Shell the peas, cook them in boiling salted water and drain after about 8 minutes.
2. Melt the butter in a saucepan, add the peas, cook for 5 minutes and add salt.
3. Cut ham into strips 4 cm long.
4. Add the ham to the peas and cook for 8 more minutes.
5. Cook the tagliolini in abundant boiling salted water and drain when "al dente" (tender but firm to the bite).
6. Finely chop the basil, parsley and mint, sprinkle the chopped herbs onto the peas and add the tagliolini.
7. Scatter the Parmesan over the tagliolini, sprinkle with pepper, sauté stirring for 1 minute, then serve
