Egg Pasta

Egg pasta is a type of pasta prepared with “00” durum wheat flour and fresh eggs. Many types of pasta are sold on the market with the addition of special ingredients and these are called “Special Pasta”. Among these, “Egg pasta” is a best-seller all over the world. It must contain at least 20% eggs, that is for each kilogram of flour at least 4 whole shelled eggs must be used.

Pasta is considered top quality when its colour is very bright, with no black or white spots, when it smells nice and tastes “natural”. Cooking must not change its organoleptic characteristics, especially its slightly sweetish taste; it must not stick together or break and must “hold” the sauce/condiment well. The cooking water must not contain any small residue and its clearness must be almost unchanged. The addition of fresh eggs improves the quality of the pasta and its cooking characteristics: it strengthens its colour that becomes yellower, improves its elasticity (above all in long pasta: spaghetti, tagliatelle), decreases the quantity of residue in the cooking water and stickiness, above all if high temperature technology is used in drying the pasta. It is also necessary to take into account the fact that the addition of eggs increases its content of other nutritional elements, in particular linoleic acid, which is vital for nutrition, as well as Fe++ (irono), Ca++ (calcium) salts and other mineral salts.
